  • 4 lbs. spareribs or baby back ribs
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 teaspoons chili powder
  • 1 teaspoon cayenne pepper
  • 1/4 cup salt
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons minced ginger
  • 1/4 cup sake
  • 1/2 cup soy sauce
  • 1/4 cup toasted sesame seeds

DescriptionDescription  The following recipe came from the San Francisco Chronicle in December 2003 and has quickly become a family favorite that we have served for dinner on birthdays and holidays.
InstructionsInstructions  Preheat the oven to 225. Mix together the brown sugar, granulated sugar, chili powder, cayenne, salt, pepper, and garlic powder. Coat the ribs on both sides with the rub mixture and wrap in aluminum foil. If the ribs are long, cut them in half so they will be easier to handle when collecting the juices. Bake the ribs for five hours. When the ribs are finished, drain the meat juices from each of the aluminum foil packets holding the ribs. Collect it ina saucepan and cook over medium heat until the juices have reduced by half. Add the ginger, garlic, sake, and soy suace to the saucepan. Bring to a boil and remove from heat. Heat oven to broil. Brush the sauce liberally on both sides of the ribs. Broil until the surface of the ribs begin to bubble. Sprinkle with sesame seeds and serve.
