Zucchini SoupZucchini Soup

  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 1 1/2 lbs. fresh zucchini, unpeeled, unsliced
  • 2 1/2 cups chicken broth
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon basil
  • 1 teaspoon seasoned salt
  • freshly ground black pepper or 1/4 teaspoon red hot pepper sauce
  • 1 cup half & half

DescriptionDescription  Here's a great way for kids to get some vegetables in their diet!
InstructionsInstructions  Saute onion in butter in a 2 quart saucepan; add zucchini, chicken broth, nutmeg, basil, salt and pepper. Cover and simmer for 15 minutes, or until zucchini is well done. Turn into blender bowl or food processor (in 2 batches) and process until pureed. Return to saucepan; stir in half and half, blending well. If serving cold, sore in covered container in refrigerator for several hours or overnight.
